   ### Is your feature request related to a problem or challenge?

   #25969 deprecated the statistics providers bundled in
`datafusion_physical_plan::operator_statistics`, since they duplicate or
replace the estimation each operator does in `statistics_from_inputs`. The [API
health policy deprecation guidelines] say deprecated APIs remain for

   > 6 major versions or 6 months, whichever is longer

   so they can be removed in `62.0.0` at the earliest (and no earlier than 6
months after the `56.0.0` release).

   | Item | Deprecated in | Replacement |
   | --- | --- | --- |
   | `StatisticsRegistry::default_with_builtin_providers` | 56.0.0 | register
user-defined providers, or none |
   | `FilterStatisticsProvider` | 56.0.0 | `FilterExec` estimate (survival
model tracked in #26052) |
   | `JoinStatisticsProvider` | 56.0.0 | join operators' estimate (multi-key
estimation tracked in #21583) |
   | `ProjectionStatisticsProvider`, `PassthroughStatisticsProvider`,
`AggregateStatisticsProvider`, `LimitStatisticsProvider`,
`UnionStatisticsProvider` | 56.0.0 | operators' own estimate |

   Remove the items above, their tests, and the helpers only they use
(`computed_with_row_count`, `rescale_byte_size`).

   ### Describe alternatives you've considered

   N/A

   ### Additional context

   Follow-up to #25969 (closes #25571).
