I am working on another PR which instead focuses on just adding `date_trunc` as a conservative first optimization and then following up with expanding out to `date_bin` as well. I am working on it in a separate PR, however much of the implementation will be similar. The work for it is tracked here https://github.com/apache/datafusion/issues/25344 I have not yet opened the PR but will soon.
