I've found that with GitLab 6.9 stable an admin can add a standard user with the user id and email address of your LDAP user. A temporary password will be generated, you don't need to care about a password.
When the equivalent LDAP user logs in that will replace this standard account, and any access you've set up to groups, projects etc. will persist. This seems like a good way to achieve what you want.
