Plesk has an own httpd.conf-File for every (sub)-Domain. Look here http://download1.parallels.com/Plesk/PP11/11.0/Doc/en-US/online/plesk-linux-advanced-administration-guide/index.htm?fileName=68694.htm (scroll down and you'll find everything you need). I don't know whether this will work with the omnibus package. Maybe you are forced to install gitlab manually.
