Since the app server currently needs physical access to the repositories it's impossible to add more app servers, or use a different host for the repositories. We are working on abstracting the git repositories, we really need this feature on Gitorious.org. Our current plan is to use an RPC interface between the host where the repositories reside and the app server. I can't promise when it will be ready though.
