Handling tab-label is not the complete solution. As GtkNotebook accepts any GtkWidget as the tab label, that might be another hierarchy. Other widgets such as GtkFrame have similar problems. These widgets should have their own add-child-functions (in glade-gtk, to keep the introspectionism of glade-3) that are able to handle these special child type. e.g. the glade_gtk_notebook_add_child() knows the special child type "tab" and add that to the notebook by a gtk_notebook_set_tab_label().
