Please note that if there is no implementation bug (at there may be some as 
the market has not bee extensively tested), if you set a market to store all 
fruits, it will be filled until full. Then if you set it to unstore all 
fruits, it can provide fruits to nearby inns.

If you want to test this theoretical behaviour, you'll be very welcomed :-)
