I've actually got a few Ercoupe models, one that I got off of e-bay, one
that my uncle gave me, and one that a friend of my uncle gave me already
assembled.  All are of the balsa wood type. The original skins that come
with the models are tissue paper.  But the friend of my uncle used that
shrink plastic that people use on R/C airplanes.  That type of finish
comes out really nice. 


If all you can find are plans, and no actual models, you might want to
look into getting the parts cut for you.  In the town I live in (Wichita
Falls, TX), there's a shop that would cut all the pieces with a lazer for
probably about $10-$20.  Seeing as you're in Maryland, and not the boonies
of Texas, I'm sure there are lazer cutting shops near you.  It could save
you a lot of time, unless you want the satisfaction of doing it all
yourself.
