Maybe I'm reading the request wrong, but I think Stefan is asking, how to start 
the Gluster services / start the volumes on the Gluster servers without 
starting the builtin NFS services.

I.e. the gluster client via fuse would then be the only method of mounting a 
volume remotely.

Yes, you were right. You can use "gluster native client/server protocol" to 
access glusterfs without using NFS.
