As far as I know you can add bricks to a replica volume just fine but
you need to add as many as your count was when you created the volume.
If you created your volume with 'count 3' as it sounds you did then you
need to add three bricks at once that will replicate with each other (or
6, 9, 12...). If you want to change your count then you have to stop,
delete, and re-create the volume. There is a way to do this with
downtime but without losing data.
The "can't change replica count" issue may have changed in 3.3 but I
don't run non-GA releases so I don't know. Also you didn't say what
version you are running nor provided the output of 'gluster volume info'.

Cloud and I can't really stop the Volume and recreate it with XX
Bricks every time a new Server is added.
