I wouldn't do that without having a more clearer picture on the problem.
Usually those '.prob-uuid' files are nothing more than probe files :

and deleting the old entries should not affect oVirt at all (should != will
not).
If your oVirt is used for Prod, I would delete them in low traffic
hours/planned maintenance window.
Can you provide the output of 'gluster volume heal volumeX info' in separate
files ?
