They are all hidden!
Don't worry; they are still there. Google is just forcing you to re-learn
where they are, and how to get to them, and how to exercise your fingers.
See below:

Next to the Send button at the bottom there is an underlined *A*. Click on
that to bring up the hidden line with formatting options.

The original email text is still there when you reply, but it's hidden from
you. See those three dots ('ellipses') in the edit window after you hit
Reply? Click those. Or press Ctrl-Shift-A. Voila, the original message
text will appear, where you can edit it and read it to know what you are
replying to.
3) now reply takes you down lower where you can't read what you're replying

Once you do the steps above, that problem should be solved. Note: You've
got to do that every time you reply. There is no global setting for that.
You can also re-locate the reply window back to the middle of the screen
... not by dragging it but with the maximize icon on the reply edit box.

Very funny ... fat chance of that. Wait another year or two and we will
see how much Google has forced down our throats, whether they help us or
not.
