I highly doubt Google is going to revert back to the old compose window.
 You are always welcome to offer feedback which is available under the Gear
menu.

I am able to assign labels to new e-mails before I hit send.  Click on the
arrow in the lower right corner of the window and there is a Label sub-menu.
