As to why not just top-post like most people do, it's because it is stupid.

You don't have to tell me it's stupid, I have already expressed that
opinion myself.

I enjoy using the 'Quote selected text' lab which lets me select what I
wish to reply to, hit the reply button and then only that text is quoted.
