That depends on how you block them ... but generally, no.

If you do it totally within Gmail, by making a Filter that deletes (or
otherwise hides) messages from them, then no, they don't see anything.  But
you can't really block anyone this way; all you can do is make their
messages go away before you see them.

There are non-Gmail services (that I think can be used with a Gmail
account) that can make it appear as if your account is bouncing their
emails.  I have never used them but I hear they exist.  (It is said they
can help reduce spam.)
