Dan,

There's no easy way to recover deleted labels and their tagged contents.
 However, if your labels were applied via filters, the filters themselves
may still exist with just the "apply the label" designation removed.  If
you recreate the labels and remember which filters were used, you can edit
the filters and hopefully recover much of what labeling was lost.
