This frustrates me as I often want to change the Subject line when I go to 
forward an email to Evernote. Here's what worked for me.

F (to forward) or R (to reply)
Shift+Tab - Highlights the "To"
Shift+Tab - Goes backwards and highlights the arrow 
Down arrow 3X - goes to "Edit subject"
ENTER - Opens subject line
Start typing to create a new subject line or right arrow to add text.
