It sounds like you have POP3 configured on your Mac. The preferred connectivity should be using IMAP. The Help System has a guide on how to set this up so you should have no problems.
BTW... If you're using the GMail app, you're not actually downloading, if you're using the iPhone mail app, you might be, which guarantees that you won't get the mails elsewhere.
