gNewSense is almost identical to Ubuntu, and to install a stripped down Ubuntu, you install the "ubuntu-minimal" apt metapackage instead of "ubuntu-desktop", by starting the LiveCD with the "server" option. I believe, though don't know for sure, that similarly you can install "gnewsense-minimal" instead of "gnewsense-desktop" in the same way.
