What specific issues do you have with the Dell/SMC switches? We've sold hundreds of them with a very low RMA rate.

We're upgrading an installation by bringing an existing config
forward from some older, slower Dell boxes to some spiffy new
Dell 690 boxes with integral Broadcom (BCM5752) NICs and a
Dell PowerConnect 2616 (an unmanaged switch) connecting them,
all supposedly capable of Gbit rates.

IIRC there are also tweaks to the networking infrastructure
itself (independent of NFS) that can come into play, maybe
TCP buffer size?

One of those tweaks, IMO, is stay very far away from Dell switches.
They have to be some of the worst switches I've ever laid hands or
cables on! SMC switches aren't far behind either (rule of thumb: stay
away from any company whose products result in the RMA of an RMA out
of the box!).

I recommend Netgear for lowend stuff, though their managed stuff isn't
bad either, and for heavy duty stuff, I love Nortel, and Cisco if you
don't mind spending twice as much for something not quite as good as
the Nortel stuff but have to have that Cisco name :)
