You need to record it as a wav, I believe the specs are 16-bit 44Mhz
stereo.

As for what programs, try rec. It should already be on your system if you
installed the sox package, which is fairly likely if sound works on your
system since I think it's required by a bunch o' stuff (at least
sndconfig). See the man page for details. I haven't used it, so I can't
say how good it is.
