If you have an entry like:
title Red Hat Linux (2.4.9-21)
root (hd0,5)
kernel /boot/vmlinuz-2.4.9-21 ro root=/dev/hda6
You can place extra options on the "kernel" line, after the root entry.
In your case you'd have:
kernel /boot/vmlinuz-2.4.9-21 ro root=/dev/hda6 hdc=ide-scsi
