Open the "Exchange System Manager" management console. Open the "Global Settings" container. From there, open the "Internet Message Formats" container. Select the "Default" rule. Right-click, choose "Properties". Choose the "Advanced" tab. Under "Message text word wrap", fill in a value less than 80. I recommend 75. Click "OK" until you are back to the main console window.
