Yes i think a plugin is overkill for such a (seemingly) simple action. I think you should make 2 custom items in the gnome applications menu, "Enable" and "Disable" Then Do should pick up the custom items and you can use it to enable and disable the touch pad. To make the menu items, you should find out a command line way to disable and enable your touch pad, so that running some commands such as "touchpad --enable" or "touchpad --disable" will do what you want. (for example, here is an example for my touchpad http://ubuntu.wordpress.com/2006/03/24/disable-synaptics-touchpad/) Then type "Main Menu" in gnome-do and add a menu item that runs the disable command when it is pressed. Then restart gnome-do and try it out. hope this works for you.
