I believe gnome-do-plugins depends on Evolution because of the Evolution
plugin. Not sure how you'd work around that.

In general though, removing Evolution also removes ubuntu-desktop (IIRC)
which isn't really a good thing to do. Is it not possible for you to have
Evolution installed but just never to use it?
