As far as I know, nobody is working on gcalctool documentation since Sun RIF'ed the Sun documentation team that was doing this. It's not just the screenshot that's out of date. It's a boatload of other things too. I've been keeping track of them. See bug #309210 for all the details. http://bugzilla.gnome.org/show_bug.cgi?id=309210 If you want to make changes, I'd be over the moon.
