Why is it that all GNOME-related IRC channels are located on
irc.gnome.org? For me, as a user of IRC, it would simplify alot if
irc.freenode.net was used instead because virtually all other free
software projects use that network.

Yes, I know someone will say that it is not a problem to use two irc
servers simultaneously in any decent irc client. But it is,
irc.gnome.org does not listen to port 6665 for example. Furthermore,
think like a programmer; two networks are more complicated than one.
In theory it should not be inconvenient but in reality it is.
