The default is to let the stems be oriented upwards for
notes below the middle staff line and downwards for
higher notes. If you want something else, you have
to tell Lilypond explicitly. There used to be macros
called \voiceone through \voicefour that handled this.
Take a look in the file parameters.ly if they are
still available in the version you use.
