I can recommend looking at the large set of example files in
the directories lilypond-x.xx/input/test/ and
lilypond-x.xx/mutopia/ of the source code distribution.
(Even if you have installed a precompiled package, it's worth
downloading the source code tree just for this reason, be careful
to download the same version, though.)
Of course, this is not the best form of documentation, but
it's easy to grab an example and make small changes to
examine how it works.
