Depending on where you are going to put the version information, updating
the date is easy.  Just add "$Date$" to the file inside the string that
you want to display and everytime this file is changed and check into cvs
the string will be updated.  The catch is that the file has to be touched
for the string to be updated.  Also, the $Date$ string expands to 
$Date: 1999/06/01 08:34:43 $ which might not be the most desirable format.

If you want to generate the about information everytime a commit is
executed (more reliable than the previous suggestion) then cvs can call a
script to generate the information.  This is easy if cvs is only being
used for one project and only slightly more difficult if cvs is being used
for multiple projects in one root.
