I thought Dave would answer this, since he gave me the answer when I first
asked this question.  But he didn't, so I will.  In all GNOME (GTK?) apps, you
can assign your own hotkeys to pulldown menu items.  Simply hi-lite it with the
mouse, then hit the hotkey you want to associate it with.  You can remove
hotkey associations in the same manner by using 'backspace'.

This is quite possibly one of the coolest 'little' features of GNOME that I
have ever encountered.  And this is the only venue I've heard it mentioned.
I'm sure it's in the manual somewhere, but who wants to read a manual to learn
how to use a GUI?  :)
