You will want to use either fink (www.finkproject.org) or macports 
(www.macports.org) to manage the process of installing Gnucash and its many 
dependencies. There is more information on installing Gnucash on Macs at 
wiki.gnucash.org/wiki/MacOSXInstallation

It takes time, but the results are definitely worth it.
