There is no installer. You download the dmg (which is a disk image, like an 
iso), mount it (most browsers will do that automatically) and drag Gnucash.app 
to your /Applications folder. Then double click and away you go.

I could have the script that makes the "/opt/gnucash-foo" link also display the 
Readme somehow, maybe by making it a PDF so that it opens in Preview -- though 
gratuitously opening other apps seems a bit rude.

Anyway, the Readme *is* on the dmg, so the user can read it if s/he is so 
inclined. But Gnucash is a pretty big download (around 50MB), so I think that 
potential users should be able to read it before they commit to downloading.
