Yes, you can set up a tax table to calculate sales tax. Take a look at Business -> Tax Table. You can set up one or more sales tax rates and which accounts they will go into. While creating an invoice, you can check whether it is taxable and which Tax Table to use. You will see the computed tax amount. For creating a sales tax report, I suggest you use the Transaction Report and customize it by changing the 'From' and 'To' dates and selecting only the Sales Tax Accounts that you want to report on.
