Why are you building stable? I modified the arguments passed to gwen for unstable/master. You can, while in a jhbuild shell, cd to the gwen directory and reconfigure it with --with-guis='gtk2' if you want to build stable, but ISTM it would make more sense for you to build unstable or master.
