Whether the string "EUR" is displayed or the Euro currency symbol depends on your locale settings. On my SuSE 8.0 (and 7.3 was similar) there was a de_DE.ISO_88xx-15 (forgot the real number :) locale that diplayed only the strings, whereas the de_DE@euro locale displayed the euro currency symbol. In that sense this is not (only) a gnucash problem.
