I am incorporating your suggestions, all of which I agree with. I'll wait a bit in case anyone else has any suggestions and then submit an updated version to the list.
I especially like your idea of using --prefix=/opt/gnucash-1.8. I think if we are consistent in suggesting that path, things will be much clearer. (I hate installing to /usr/local for the reason you mention... it is a pain to remove all the files and to install different versions.)
