Thanks Dave.  I found that there are two versions of libunicode around.
The one I previously downloaded was from 
http://sourceforge.net/projects/libunicode/ which contains 
libunicode-0.7.  It does not define unicode_char_t.

I found the one which does define this symbol from the gnome site.
The version of the library there is libunicode-0.4.gnome.  

Wonder why there are two separate versions of the same library.
