Actually, no, that bug is about Windows.
To enable input methods on Macs add the line
GTK_IM_MODULE_FILE={GNC_HOME}/etc/gtk-3.0/gtk.immodules
to Gnucash.app/Contents/Resources/etc/gnucash/environment
