The first two are the same and already reported as https://bugs.gnucash.org/show_bug.cgi?id=796734 <https://bugs.gnucash.org/show_bug.cgi?id=796734> and there’s a workaround explained there. The third one is new, so please do file a bug report on it. It’s not option by itself, it’s option-u or more correctly alt-u, is set as a binding somewhere. There’s no problem entering é, for example.
