Would suggest you start with the latest version of the Tutorial and Concepts guide https://www.gnucash.org/docs/v3/C/gnucash-guide/index.html and the help manual rather than a video from 2011. Even the most recent video is from 2016. GnuCash has changed quite a bit since then. Chapter 3.2 of the Help Manual discusses the Account heirarchy setup https://www.gnucash.org/docs/v3/C/gnucash-help/getting-started.html.
