Hello Julian,

AFAIK there is currently no module to do it automatically in
finance-quote. So you have to do it manually:
1. go to e.g. 
https://info.tase.co.il/eng/MarketData/Stocks/MarketData/Pages/MarketData.aspx
and download the csv file. There is a button "Export Table Data" at
the bottom.
2. in GnuCash use "File-->Import prices from csv".

To get this done more  conveniently somebody, probably you, had to
write a module for finance-quote.
