Tom AFAIK Flathub only has the v3.8 available as a download. I don't think the GnuCash developers don't maintain the flathub versions.
The other alternative is to build GnuCash from the sources. On Linux Mint this is fairly easy to do once you have the dependencies installed. The Wiki page https://wiki.gnucash.org/wiki/Building_On_Linux has fairly detailed instructions and it is generally fairly simple once you have the depndencies installed. gnucash-development-dependency-setup.sh <http://gnucash.1415818.n4.nabble.com/file/t375329/gnucash-development-dependency-setup.sh> if run as a bash script in a terminal should download and install all the dependencies. If you install from sources you will need to keep the sourcefile directory and the build directory to uninstall from them when necessary by running the "make unistall" command. Much cleaner than having to delete directories. If you have any problems come back to the list and we can usually help you through. If you go to the bottom of the main GnuCash downloads page where you downloaded the stable 3.8 version from there is a link View all GnuCash downloads. Click on it and it will take you to the source forge download page. Click on the link to gnucash(stable) on that page and you will end up on a page with the folders for version numbers listed as links Click on v3.7. You can download the source files for v3.7 from that directory (gnucash-3.7.tar.bz2).
