You can see the transactions from an account along with the subaccounts. >From the accounts list, select the upper level account, right click, and choose open subaccounts. If you make a subaccount for the grant or loan transfers and pay from the subaccount as appropriate you will have an itemized list of the transactions for the grant or loan.
If that doesn't work for you, you could also transfer funds as needed from the loan or grant account into the bank account. Each transfer should contain details of what expenses are being covered by the transfer. Basically this is a reimbursement model. This might be rather cumbersome if there are a lot of transactions.
