David , You can control the number of backup files kept with the Edit->Preferences menu item under the General tab area. You can choose to retain the files for a specific period, retain all backups and log files or never to generate them at all. The optimum setting will depend on how often you use GnuCash and whether you leave the file open or closed between times you use it and any other general backup strategies you have in place. A new log file and backup file are created each time you open the application.
