Donations go into a bank account and are occasionally--as in once every few years--used for things like server hardware. We have a consultive process in the core group for deciding when and on what to spend money. It is transparent to the core group but not to anyone else.
There's no legal entity behind GnuCash, so there is no tax deduction available. There are far better destinations for your philanthropy, especially this year. Consider a local food bank or housing-access group.
