GnuCash doesn't have 'categories' but it does have accounts.
If you have an account set up, presumably something like Expenses:Charity, and you have transactions where you spent money from cash/checking/credit card/etc. towards Expenses:Charity, then simply select in the Transaction Reports Options > Accounts (tab) and *only* select the Charity expense account.
That way only transactions appearing in that account will be included in the report.

I can generate the transaction report for the entire year. But, I haven't found a way to restrict it to 'Charity' only category. Any guidance is much appreciated.
