If you really want to sort by account name, in the Accounts panel click on the "Account Name" header column header and notice the direction arrow at the right of that header. You want it to be pointing up, to sort in normal (increasing A to Z) order. Personally, I find it easier to use the Account Code column. Giving accounts numeric codes and then sorting in ascending order on that field, when I add an account I find it easier to place that account in just the position I want.
