Russel, I'm running Linux Mint 21 with GnuCash 4.11 (built from tarball) installed and have no editing problems at all with it. Many of the interface teatures are determined by common libraries on which GnuCash depends particularly changes in the GTK libraries rather than in the gnuCash coding itself. This can be beyond the GnuCash developers control if changes in the underlying library produce behaviour changes in GnuCash until it is noticed and they create a workaround until the library is fixed. It may pay to check the installed runtime versions against the dependency list in the release notes. "dpkg -l | grep <string>" where string is the name or part of the name of a package will usually list a package's installed version number. My Linux Mint was upgraded from 20.3 and not a clean install and I usually have the latest available versions of the dependencies installed as I build both the stable version from tarball and the current maint and master development branches which may account for why I don't see the grey box. All mouse actions and arrow keys work fine in editing values on my system. Was this in the register for an account or in a dialog box?
To track the problem down will involve trying to determine what is different about your system from both mine or Adrien's (which should be a clean install of LM 21 running in the VM).
