Select the transaction that you wish to edit. Click on Split to see all of the splits for this transaction. Edit the transfer account for the split that has the wrong transfer account. Press Enter.

I'll have several accounts open and I just forget to switch.
In Quicken, I just move the transaction (splits and all) to the new account.
The Internet chatter I've found so far lead me to believe this feature is missing from gnucash.
I hope that's not true because it would really cause me excessive hassle.
I hope there is a way to move a transaction (including any splits) to another account.
